Singaporean Rice

Hello everyone! To be honest with everything that’s going on around the globe it’s really overwhelming to get up and do anything !! Reading or hearing about the negative impacts of our humanly actions on this beautiful planet is literally draining out all the energy from within us ! Everybody has a different method to cope with this environment, Mine is COOKING !! which I am sure many of you can relate to !

I had wanted to make singaporean rice for a long time so I gave it a go and it turned out reallllyyy good.

It’s made by layering rice, spaghetti noodles, gravy, drizzled with sauce and finally topped with aromatic tempered garlic butter ! Oh the combination of flavors it has !! Everyone in my family were bowled over.

The burst of flavors this dish has is just unreal! You got to try it it to experience it !!

All the recipes I looked were made with chicken. I ran out of chicken so used fish fillet .You can use whatever you like.

So without further ado, let’s get started with the recipe

First layer :

Cook 2 cups of rice with a little bit of salt and keep aside.

Second layer :

Spaghetti noodles:

Boil water in a vessel

Add spaghetti and enough salt

Add some olive oil

When the spaghetti is done, drain it out .

Drizzle some oil and keep it aside .

Third layer

Fish gravy

500gm fish fillet

Red chili powder 2 tsp

Coriander powder 1 tsp

Onion powder 1 tbsp

Soya sauce 1 1/2 tsp

Vinegar 1 tsp

Corn flour 4- 5 tbsp

Egg 1

Method

Cut the fish fillet into small pieces.

Marinate the fish pieces with all the spices except corn flour.

Coat the pieces with corn flour and deep fry them .

Coat it with corn flour
Deep frying them

Take them out in a plate and keep it aside .

Gravy :

3 small carrots julienned.

2 capsicum julienned.

Onions 2 medium sized.

Soya sauce 1 tbsp

Red chili flakes 1 tbsp

Ketchup 2 tbsp

Lemon juice 1 tbsp

1 heaped tsp cornflour

Ginger garlic paste 1 tbsp

Salt

Pepper

Method

In a pan add some oil.

Add onions and fry them till transparent.

Add ginger garlic paste , sauté for 2 minutes.

Add carrots and capsicum.

Fry them.

Add all the spices.

Cover and cook on low flame for 10 minutes.

Add water.

Adjust salt and pepper.

Add the fish pieces into the gravy and cook for 2 minutes.

Mix corn flour with little water and add it to the gravy . Add a little water if it’s too thick .

Sauce:

Mix 2tbsp of mayonnaise with 3 tbsp of ketchup .

Layering

Start layering in a dish .

Start with a layer of rice.

Then add a layer of spaghetti.

Next, add a layer of fish gravy.

Drizzle the sauce on top.

Prepare the temper:

In a pan add butter.

Add crushed garlic.

Add 2-3 chopped green chilies.

Fry it till its aromatic and add it on top of the layered dish.

Done !!

It might sound or look like a lengthy process but believe me it worth a try !! Very flavorful and a really great dish !!
