Basbousa

Helloo everyone !!… so today I am back with another recipe.

Basbousa is a middle eastern dessert which is basically a semolina cake, is drenched in sugar syrup as soon as it is out of the oven . There are many different recipes of Basbousa .

People have tried making basbousa with their own twist by adding cheese, chocolate and a variety of different fillings.

If you have been to any middle eastern cafe, you will definitely find Basbousah on their menu . This dessert brings back so many memories to me . The most fond memory is me and my sisters having this delicious dessert on the beaches of Saudi Arabia with hot arabian coffee. Surely I didn’t know how to make it then.

I learnt how to make Basbousa from my mother in law (she is a great cook by the way and many of my recipes are inspired from her with my twist on it ). There was one particular basbousah, that we had in a restaurant, that me and my family absolutely loved, that I made it my mission to find out the recipe.

“Bingpot!!”(I am binge watching Brooklyn nine-nine and it’s all in my head) I finally found the recipe I was looking for and I just added coconut and condensed milk to make it more softer and flavorful . You can omit the coconut if you dont like the flavor . I must say this is the easiest recipe you will find . This is usually my go to dessert when I am in a hurry or when there are unexpected guests or if am just craving for some sweetness in my life. 😁

So here it goes .

Ingredients:

1 cup semolina

1 cup milk powder

3/4 cup sugar

1 tablespoon baking powder

1/2 cup oil

1/2 cup shredded coconut

2 cans or 120z of cream

1/4 cup condensed milk

For syrup:

1 cup sugar

1 cup water

Few strands of saffron

Method:

Preheat the oven at 200°C , and grease your baking dish . Keep it aside.

Start by mixing all the dry ingredients in a bowl along with baking powder.

Add oil,cream and condensed milk .

Mix it all together .

Pour it into your baking dish .

Bake it for 30 min at 200°C , until it is golden brown and the tooth pick when inserted comes out clean .

While the cake is baking, in a sauce pan mix one cup sugar and a cup of water with few strands of saffron and let it boil .

Simmer it for 10min and switch off the heat .

As soon as the cake is out of the oven pour half of the syrup on the hot cake so that it soaks the syrup .

You can also add condensed milk on the cake after the syrup if you want it to be softer and sweeter.

Garnish with almonds or pistachios and serve it warm.

So there you have it the easiest dessert recipe and I guarantee you its finger licking good!!
